New strategies for sustainable production of cell-based fish
Summary
CleanFish aims to disrupt the traditional processes involved in obtaining of fish products using cellular agriculture strategies based on three main innovative drivers:
- Explore electrical stimuli and delivery of key compounds as a completely novel approach for fish cell differentiation/maturation into muscle tissues, namely studying the effect of electrical stimulation to enhance muscle cells formation.
- Manufacturing of hybrid edible materials combining algae and fish cells for nutritional and sensorial properties enhancement. CleanFish also explores the disruptive idea of co-cultivating and/or bioprinting heterotrophic fish and autotrophic microalgae cells to simultaneously improve the organoleptic properties of the bioprinted cell-based fish meat products and potentially mitigate GHG emissions.
- 3D bioprinting of fish tissue and optimisation for optimal deposition of adipose and muscle fish tissue able to recreate with a high precision level the fish fillet details.
CleanFish will also establish and validate methodologies to assess cellular agriculture products concerning:
- Fish fillet nutritional and sensorial characterisation as IPMA has developed extensive protocols for fish tissue characterisation, ranging from composition, histology, texture and a panel of tasters professionally trained for conventional fish food.
- Assess ecological impacts on fish cell agriculture compared to current fishing practices and aquaculture using life cycle analysis methodologies.
