Research Activities

My work focuses on yeast responses to stress. I study molecular, biochemical and physiological aspects of Saccharomyces cerevisiae response to several stresses occurring during alcoholic fermentation, namely ethanol and acetic acid accumulation and nitrogen depletion. I am also interested in studying the mechanisms of resistance to acetic acid in the food spoilage yeast Zygosaccharomyces bailii.
